Cover the molds and freeze for at least six hours. If you have a deep freezer, store the kulfi in there. If you want your kulfi on a stick, insert popsicle sticks when the ice cream is partially frozen. Pour the chilled mixture into your moulds. There are traditional kulfi molds, but they may be difficult to find . If you can't find them, try substituting with disposable souffle cups or even popsicle molds.

Kulfi of course made the traditional way tastes way better than the quick fix ones for sure... I am so drooling at your kulfis and wouldn't mind getting one right now... I like to add Saffron or cardamom as flavouring to this kulfi. I have not added any colour and all the colour is natural and from Saffron.

We even had a good kulfi shop nearby where there were dozens of different flavours and it was really difficult to choose. To date whenever I go to my mom’s place I always buy some. The roadside vendors or the professionals generally freeze this in a mixture of salt and ice which is added to a big matka. The matka helps to insulate from external heat and slows down the melting process. Next, remove the mixture from the fridge and whisk it well and place the mixture in the freezer.
However nowadays you can find all innovative flavors in the dessert sections of restaurants. I am sticking to the basic malai kulfi or cream kulfi recipe today. To make this malai kulfi we need basic ingredients.
How To Make Chocolate Kulfi (Step By Step Pictures)
If you dont have kulfi molds than you can use small cups or glasses too. Pour the mixture into kulfi molds. Yes, it takes time and patience, but you can always pair it alongside your other work. The beauty of this method is that it does not need any other ingredients to thicken. The reduced milk has a good nice consistency and can easily set. Insert kebab or ice cream stick in the kulfi and serve.

I used cream just to achieve the thick & rich consistency quickly. You can also skip it and cook for a little longer. You can also whisk ¼ cup homemade malai/ cream which you get after boiling milk. It has to be at room temperature and whisk it with a fork and add.

It should be of pouring consistency. Meanwhile add pistachios along with saffron to a blender jar and make a slightly coarse powder. I love my steel cups for freezing this. If you want you can buy kulfi molds online or use any popsicle molds or disposable cups. The Kulfi molds all I have found are made of aluminum but steel ones too work great. Lower the flame completely and Pour the corn starch slurry/ mixture.

Different fruits and nuts can be added to come up with some unique flavour. Grind together sugar, almonds, pistachios, saffron and cardamom together to a slightly coarse mixture,Set aside.Boil milk in a pan. Thanks for sharing these variations. The kulfi should of taste of coconut.
Switch off once the milk is reduced and everything mixed together. One can make it plain without any flavours or just cardamom. Generally referred to as Malai Kulfi. Malai Kulfi however would have a slight addition of mava for the rich texture. Full fat milk is essential for the authentic flavor of kulfi. Add the sugar and saffron, bring to a boil again and simmer for another minute or two.
Then add the powdered seeds along with the skin of cardamom pods. You generally don't have to grease the kulfi molds, and greasing them could give them an odd taste. Free the kulfi from the molds with a little warm water.
A lot of recipes call for condensed milk. But I am making kulfi without condensed milk today. It is a popular Indian dessert that is made by thickening milk on slow heat with some sweetener and is also known as kaulfi. Because it is creamier and denser than ice cream, there are several flavors to choose from. Among the traditional options are cream , rose, mango, cardamom , saffron , and pistachios.

Because there are no ice crystals in the mixture, it is not necessary to remove it from the freezer to mix it. The most common reason people make condensed milk at home is for unusual flavors that are more complex than vanilla. You must add more than just lavender, rosemary, and matcha to the recipe. Make instant kulfi with condensed milk and whipping cream.
Whisk together 1 cup of whipping cream with ½ can sweetened condensed milk until thick. Powder 15 to 20 pistachios or cashew or almonds of a mix of all with 3 cardamoms and a pinch of saffron. Add this to the whipped cream and condensed milk.
